The perfect, healthy, festive meal for Halloween! Fun for the family, or for typical 30 year olds with no kids… obviously! I read through a few different recipes and kind of combined it into one for us! It turned out amazing, we were seriously licking our plates clean. We will definitely be doing this again soon and have decided it will be a family tradition for years to come! It is so easy to switch up the colors and do for other holidays! P.S. GO ASTROS!
Stuffed Bell Peppers Recipe:
Prep time: 20 min.
Bake time: 10-15 min.
- 4 bell peppers ( I chose orange for obvious reasons but you can choose any!)
- 1 lb ground beef (we use organic grass fed)
- 1 cup quinoa
- 1 cup rice
- 1 diced tomato
- 1 half onion diced
- 1 cup of shredded cheese (any flavor!)
- seasonings: garlic powder, cayenne, chili powder, cumin, tumeric (optional), salt/pepper
Cut the top of f the bell pepper and scoop out insides with a spoon. (much easier than pumpkin insides!) Take a small knife or pumpkin carver and carve out whatever image you would like! Cook quinoa and rice and set aside. Cook beef over medium heat and season according to taste, heavy on the chili powder! Preheat oven to 350. Miss all ingredients together and melt half the cheese in. Fill the peppers and top with small amount of cheese. Place on cooking sheet/tin and bake for 10-15 min. depending how soft you want the shell to be. Enjoy!
